                        Ultimate Chocolate Chip Cookies

                        Ingredients:
                        3/4 cup granulated sugar
                        3/4 cup packed brown sugar
                        1 cup butter or margarine, softened
                        1 egg
                        2 1/4 cups all-purpose flour
                        1 teaspoon baking soda
                        1/2 teaspoon salt
                        1 cup coarsely chopped nuts
                        1 package (12 ounces) semisweet chocolate chips (2 cups)

                        Directions:
                        1 Heat oven to 375ºF.
                        2 Mix sugars, butter and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in nuts and chocolate chips.
                        3 Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
                        4 Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.

                        You will need three things for cake balls: cake, frosting and coating. Here are some ideas:

                        •Devil's food cake with fudge icing and dark- chocolate coating

                        •Yellow cake with buttercream frosting and orange-colored vanilla coating with green or black accents

                        •White cake with white frosting mixed with orange and yellow sprinkles and chocolate coating

                        •German chocolate cake with coconut- pecan icing and milk- chocolate or light-cocoa flavored coating

                        •Spice or carrot cake with cream-cheese frosting and vanilla coating

                        •Lemon cake with lemon frosting and vanilla coating

                        •Chocolate cake with vanilla frosting and mint-flavored coating tinted green.

                        Ingredients

                        1 (18.25 ounce) package cake mix
                        1 (16 ounce) container prepared cake frosting
                        6 ounces of chocolate flavored confectioners coating disks or bar (available in white chocolate, dark or milk)
                        Food Coloring (optional)

                        Steps

                        Prepare the cake mix according to the directions on the box. When cake is finished baking allow to cool for 30 minutes. Crumble the cake into a large bowl using a stand mixer or a hand mixer. Add the frosting and mix until well combined. Place the bowl in the refrigerator for at least 3 hours or overnight.

                        Line a baking tray with wax paper. Use a melon baller as a scooper to form balls with the cake mixture. Place on wax paper. Once you have used all of the cake mixture, place the baking tray in the freezer for 1 hour. Melt the chocolate in a glass bowl of the microwave, stirring every 5-10 seconds until smooth. At this point you can add a bit of food coloring if you are using white chocolate.

                        Remove the balls from the freezer. Using one toothpick, pick up the balls one at a time and dip in the chocolate. Use a second toothpick to slide the ball off the first toothpick onto the wax paper lined baking tray.

                        NOTE: an old Easter egg dipper works as well. If the balls fall off the toothpick into the chocolate, they are not firm enough to work with and you'll need to place them back in the freezer for additional time

                        Once you have covered all the balls in chocolate coating place the tray in the refrigerator until the chocolate coating is set. At this point you can drizzle other chocolate on the balls for decoration.
                        Serving Suggestions

                        Serve with a cold glass of milk!

                        Cowboy Cookies

                        1 cup shortening (Crisco)
                        1 cup granulated sugar
                        1 cup brown sugar
                        2 eggs
                        1 teaspoon vanilla extract
                        2 cups all-purpose flour
                        1 teaspoon baking soda
                        1/2 teaspoon salt
                        1/2 teaspoon baking powder
                        2 cups rolled oats
                        1/2 cup chopped pecans
                        1 (6-ounce) package chocolate chips
                        1/2 cup shredded coconut (optional)

                        Directions

                        Preheat oven to 350 degrees F.

                        In a large bowl, with an electric mixer, cream the shortening, granulated sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined. Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.

                        Flourless Peanut Butter-Chocolate Chip Cookies

                        Makes 2 dozen
                        Hands on time 30 min
                        Total time 1 hr 14 min

                        You will need
                        1 cup creamy peanut butter
                        3/4 cup sugar
                        1 large egg
                        1/2 tsp baking soda
                        1/4 tsp salt
                        1 cup semisweet chocolate morsels
                        Parchment paper

                        1. Preheat oven to 350
                        Stir together peanut butter and next 4 ingredients in a medium bowl until well blended. Stir in chocolate morsels

                        2. Drop dough by rounded tablespoonfuls 2 inches apart onto parchment paper lined baking sheets. (spray your tablespoon with cooking spray for easy release onto baking sheets)

                        3 Bake at 350 for 12 to 14 minutes or until puffed and lightly browned. Cool on baking sheets on a wire rack for 5 minutes. Transfer to wire rack and let cool 15 minutes

                        I have also modified this recipe to make what I like to call Gooey Chocolate Chip Praline...It's amazing!
                        Just substitute half of the peanut butter for honey. It pours into the paper lined baking sheet, when it's done cooking you tear it apart and it's delicious!!!
